You'll Need:
Tortilla Chips - I prefer the flat round ones, they support the layers of topping better.
Pulled Pork (or Chicken)
1 1/2 cups shredded Cheddar
1 cup shredded Vidalia Onion
Your choice of BBQ sauce - I used Sweet Baby Ray's.
Directions:
On a microwaveable plate, assemble your chips for maximum topping touches. No layering the chips too much! You want to be able for the sauce and cheese to melt down all over. Take your pulled pork, and rain it down like God's gift all over the chips. Follow with the cheese and onion. Now take your sweet succulent, finger lickin' good BBQ sauce and drizzle those chips with love. A lot of love. I mean it, show those chips some love. Okay, now that you've shown your goods to the chips, pop those suckers in the microwave and nuke it for 3-4 minutes until all the cheese has melted. Serve that mess up, don't forget the napkins, boys are messy after all. Bonus points if you came in the room carting his favorite IPA.
